What is a good recipe for Belgian waffles? I want them to be nice and light and crisp.?

I just got a waffle iron and want to make great waffles. does anyone have a good recipe? Or know a secret to making light crispy waffles?





also suggestions for toppings would be appreciated.

The difference in pancake batter and waffle batter is the egg whites being beaten in waffles. To many restaurants try to pass off pancake and waffle batter as interchangeable.





This recipe should work well and isn't to difficult.


Ingredients:





2 cups all-purpose flour


2 tsp. baking powder


1 tsp. salt


2 tsp. sugar


2 cups milk (whole or 2 percent, depending on preference)


2 eggs, separated


1 Tbs. butter, melted





Preparation:





1. Pre-heat waffle-maker and oil grates lightly with salad oil.





2. Sift dry ingredients together in a bowl.





3. Separate the two eggs, then add egg yolks, milk and the melted butter to the dry ingredients and beat together thoroughly.





4. In a separate bowl, beat egg whites until stiff.





5. Stir in about 1/4 of the whites into the batter and then fold in the remaining whites using a gentle folding method.





6. Pour 1 cup of batter onto lower grates and close the lid and cook for about 1 1/2 minutes.





7. Remove waffle and top with whipped butter and warm maple syrup or your favorite topping.





Yield: 12 waffles.

Belgian buttermilk waffles with glazed bananas





For waffles


2 cups all-purpose flour


2 tablespoons sugar


2 teaspoons baking powder


1 teaspoon baking soda


3/4 teaspoon salt


2 cups well-shaken buttermilk


3/4 stick (6 tablespoons) unsalted butter, melted and cooled to room temperature

Preparation


Make waffles:


Put oven rack in middle position and put a large metal cooling rack directly on it. Preheat oven to 250掳F and preheat waffle iron.





Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.





Whisk together buttermilk, melted butter, and eggs in another bowl, then whisk into flour mixture until just combined.





Brush hot waffle iron lightly with vegetable oil and pour a slightly rounded 1/2 cup of batter into each waffle mold (see cooks' note, below). Cook waffles according to manufacturer's instructions until golden and cooked through, about 3 minutes. Transfer as cooked to rack in oven to keep warm, keeping waffles in 1 layer to stay crisp. Make more waffles in same manner.





Make topping:


While last batch is cooking, heat butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then add banana slices in 1 layer and cook until golden, about 1 minute per side. Remove from heat and add syrup to skillet.





Spoon bananas over waffles, then drizzle with warm syrup before serving.





Cooks' note:


If using a regular waffle iron (not Belgian), batter will yield about 14 waffles using 1/3 cup per waffle.

    That's a good one. You made me smile. No no. Just buy that waffle pan and those ';just add water'; pancakes flower and that's it. If you want it fast, don't wait until it is dark. But if you want them delicious, add a bit of vanilla.

    sift:


    one cup flour


    2 teaspoons baking powder


    one-quarter teaspoon salt (not needed)





    beat and add:


    one egg (optional)





    add:


    1 cup milk (scant)


    stir gradually to make smooth

    1 teaspoon melted butter or oil





    cook in a hot frying pan, flip pancakes when they bubble, to brown the other side.

    I just made my 2 wks batch of belgian waffle this morning. My recipe will yield 16 belgian waffles. Usually I eat one and freeze the other 15. Here it is:





    4 cups plain flour

    Handed down in my family for generations. It's meant to be refrigerated overnight. However, if you must have your pancakes *now*, measure the baking powder in slightly rounded teaspoons instead of leveled off. Let the batter sit on the counter at room temp until it starts bubbling, to be sure that the necessary chemical reaction is taking place. It's very easy to 'draw' simple shapes as you pour the batter. Children adore hearts, stars, their initials, etc.

    Yield: 8 waffles





    2 egg yolks


    2 cups milk


    2 cups all-purpose flour


    1 tablespoon baking powder


    1/2 teaspoon salt


    1/3 cup oil


    2 egg whites, stiffly beaten





    Preheat waffle maker. Put all ingredients except egg whites in a large mixer bowl. Beat on low until moistened. Increase to medium, mix until smooth. By hand, gently fold in beaten egg whites.     This is my favorite waffle recipe.





    2 cups all-purpose flour


    1 tablespoon baking powder


    1 teaspoon salt


    3 tablespoons white sugar


    4 egg yolks


    4 egg whites


    1 1/4 cups milk


    1/2 cup vegetable oil





    In a large bowl sift together the flour, baking powder, salt, and sugar. Make a well in the center of the bowl.


    In a separate bowl, mix together the egg yolks, milk, and oil. Pour into well of flour mixture and stir well. Stir just until ingredients are moistened.


    In a small bowl beat egg whites until stiff. Fold into batter.


    Cook batter in waffle iron.








    note: you can also fold in chocolate chips. cinnamon, shredded coconut...

    I don't have a recipe for this myself, but Ener-G makes a product called ';egg replacer'; that you can use in waffles or other ';baked'; goods just as if they were real eggs. It's a powder that you mix with water per directions on the box, it's shelf-stable (it doesn't go bad), and it's entirely vegan, made from vegetable starches and such.





    I've used it when making things for people who don't eat eggs and it's worked quite well. Look for it in health food stores.

    The one on the Bisquick box is always good. Or Hungry Jack are also good. I like to add a teaspoon of vanilla extract. Easier than making from scratch, and they always come out perfect. Some waffle makers can over cook the waffles so watch for the steam coming out of the sides, after it stops steaming it's done. Make sure to use some non stick cooking spray each time you fill with batter. Don't overfill the griddles, just a large spoon full in the middle and when you close it, the batter will spread out.Good waffle recipe. ?

    1 cup toasted pecans (completely optional)

    Preheat waffle iron. In large bowl, whisk together eggs, buttermilk, milk and butter. Stir in apple. In another bowl, whisk together flour, sugar, baking powder, spice, baking soda and salt. Add flour mixture to egg mixture; whisk until smooth (some small lumps are ok).





    Sprinkle 2 T. pecans (if using) onto waffle iron. Pour about 2/3 cup batter onto surface. Cook waffles until golden brown, about 5 minutes. Keep warm in 200掳F. oven while cooking the remaining waffles.

    Lemon-Poppy Seed Waffles


    Ingredients: Makes 10 Waffles





    1 1/2 cups all-purpose flour


    1 1/2 teaspoons baking powder


    1 tablespoon plus 1 teaspoon sugar


    1/2 teaspoon salt


    2 tablespoons wheat germ


    2 large eggs


    1 1/4 cups whole or 2% milk


    6 tablespoons melted butter (reserve 1 tbs to brush on waffle iron)


    Zest of 1 lemon


    2 tablespoons poppy seeds





    Note: If making the maple whipped cream put a medium metal or glass bowl in the freezer along with the attachments for a hand-held mixer.





    Preheat the waffle iron (check the manufacturer鈥檚 setting and adjust according to how well done you like your waffles). Using a fork, cut the dry ingredients together thoroughly in a large bowl. Beat the eggs, milk and lemon zest together with a fork or whisk and pour into the dry ingredients. Mix together with the fork until there are no large clumps, but as with pancakes, don鈥檛 over mix! Cut in the 5 tablespoons of butter last.





    When the iron is ready, brush some butter on the top and bottom of the iron. Ladle on just enough batter so that it won鈥檛 squirt over the edges when you close the iron. Sprinkle a dusting of poppy seeds over the surface of the batter and close the iron. When the waffle irons beeps or blinks (or when the waffles have been cooked to your liking), take your waffle out. Serve with maple syrup or maple-whipped cream, see below.





    Maple Whipped Cream


    Ingredients:


    3/4 cup heavy cream


    1/2 teaspoon pure vanilla extract


    1 tablespoon pure maple syrup





    Put a medium metal or glass bowl in the freezer along with the attachments for a hand-held mixer. Allow to cool for a least 15 minutes.





    Put the heavy cream, vanilla and maple syrup into a your dry, cold bowl and whip with a hand-held mixer until the cream holds a soft peak. That's it.

    French Toast Waffles


    Serves two





    3 large eggs


    1/4 cup heavy cream


    pinch of salt


    1 tablespoon sugar


    1/2 teaspoon vanilla extract


    1/8 teaspoon ground cinnamon


    2 teaspoons orange zest, finely grated


    4 slices brioche or challah pullman*





    1. Lightly beat the eggs, then add all other ingredients, except the bread, and beat until well combined.





    2. Soak two slices of bread in the egg mixture for about 1 minute, then turn over and soak the other side of each slice for another minute. Move the slices of bread to the waffle iron, and arrange them to fit.





    3. Press down the waffle iron to make those waffle-grids on the french toast. As the waffles cook, they鈥檒l rise and get all puffy, then start to deflate again. Take the waffles out just after they鈥檝e started on their deflating stage. This ensures that you get a little of the crispy, and a little of the eggy insides.





    4. Repeat with the other two slices. Serve with confectioner鈥檚 sugar and/or maple syrup.





    *This just means brioche or challah bread in the usual white bread loaf shape :) Not the large mushroom-shaped brioches or the braided challah. Square slices basically fit better into a waffle iron.
    You might think this is silly, but the best 'recipe' I've ever used was on the back of a box of Jiffy cornbread mix. Yes, cornbread waffles. They are the best waffles I've ever had in my life, I'll never use another way.

    I haven't made it vegan yet, because my waffle maker broke, but I would try bisquick waffles. Just replace the eggs with banana, and milk with soy milk (although I am not sure if it calls for milk). Bisquick mix is vegan.

    In a small mixing bowl, beat egg whites until stiff; set aside. Beat egg yolks; add milk and melted butter. Sift dry ingredients together; add egg yolk mixture and mix until smooth and fold in blueberries. Gently fold in beaten egg whites. Bake in a hot wafflemaker.


    Makes about 6 blueberry waffles
    For waffles, I use the Bisquick recipe on the bisquick box. Pour the batter on the waffle iron, then add a handful of frozen blueberries on top of batter. Close lid, cook as usual.

    18 Ounces of dark chocolate, chopped up


    1 Cup of heavy cream


    12 Tablespoons of butter (unsalted) cut into cubes

    Direction:





    Throw in all the ingredients except for vanilla. Then mix everything in. Place over boiling water on a low heat; whip until melted and soft. Remove from high temperature and boiling water; beat with vanilla in a whisking manner. Place in a ceramic bowl them microwave at moderate power for a minute. Then fold the ingredients very well until very smooth. Then microwave for twenty minutes then stir well until the topping is silky soft. Chill for a moment.     4 squares or 4 ounces of dark chocolate, chopped up

    In a little heatproof bowl, mix chopped chocolates with heavy cream. Put over boiling water on a low heat. Whip until almost thawed out. Remove from high temperature and boiling water. Beat until soft. Then cool by stirring the batter occasionally until room temperature.





    In a medium sized bowl, beat the egg yolks and milk until well-mixed. Set aside. Sift the sugar, cake flour, salt and baking powder into a medium-sized bowl. When the chocolate mixture is at room temperature, add now the dry ingredients together with the egg yolk and milk mixture. Fold until blended, should a few lumps appear just ignore.





    Preheat the waffle maker. While the waffle maker heats, you may start cleaning a small bowl with a clean beater, beat the egg whites on high speed to stiffen the peaks. Tenderly fold into the batter until there the white streaks disappears.

    Belgian Waffles:





    2 quarts and one pint of liquid (half mineral water, half full milk) (2,5 liter)


    2/3 ounce of yeast (20 gram)


    1 lb of flour (1/2 kg)


    5 oz of diary (cream) butter which you melt in a bain-marie (a ';double'; boiler)(150 g)


    1 spoon of (salad) oil


    3 or 4 eggs, depending on their size


    4 oz of sugar (100 gram)


    a pinch of salt


    Heat the liquid up until it is tepid. Take a cup of it apart and let the yeast dissolve in it. Sift the flour into a bowl; sprinkle the salt at the edge of the flour and make a hole in the middle, where you pour the dissolved yeast and the melted butter.


    Add the egg yolks, the sugar and the remaining liquid in the hole. Knead the mass from the inside out until you have a homogeneous dough. If necessary, dilute it with a little additional liquid.





    The dough should be not so liquid as for pancakes. Whisk the egg whites and scoop them carefully with a slice through the tough.





    Cover the dough and leave it to rise in a heated place (if in Winter) until the volume has doubled.





    Pour some dough unto the heated and greased iron. Close the iron immediately and bake the waffle until it becomes golden brown.
    Original Golden Malted Waffles


    2 eggs, beaten


    1 1/4 cups water


    2 cups Golden Malted Flour


    4 tbsp. butter, melted


    Beat eggs and water together, then add flour and mix well. Stir in melted butter and make sure to mix well again. Ladle onto hot waffle iron and remove when golden brown. Makes 5-6 waffles.

    If the recipe calls for oil, then that's what you add. Follow the recipe to a T %26amp; enjoy.

    Waffle House Chili





    2 (15-ounce) cans pinto beans (not drained)


    1 pound lean hamburger


    1/4 pound breakfast sausage


    2 cups chopped yellow onion


    1 can (15 ounces) tomato sauce


    2 cubes beef bouillon (or 2 tablespoons beef bouillon granules)


    1 teaspoon salt


    1 teaspoon chili powder


    3/4 teaspoon ground cumin


    1/4 teaspoon black pepper


    1/4 teaspoon sugar


    1/8 teaspoon garlic powder


    1/8 teaspoon ground oregano





    Brown hamburger, sausage and onions together in 6-quart saucepan. Add pinto beans (not drained), add can of tomato sauce and add enough water to rinse can. Add beef bouillon granules. If using beef bouillon cubes, dissolve in 1/4 cup water then add to the pan. Add salt, black pepper, garlic powder, ground oregano, cumin, chili powder and sugar. Blend thoroughly.

    I got a Belgen waffle maker (bigger holes in the waffle) and use Bisquick mix. The waffle maker makes it all the more easier. The taste comes from what you add to the waffles: fruits, nuts, spices...make it your own!

    I would like to make waffles tomorrow morning, with the waffle maker .. but I don't want to use the typical pancake mix type stuff. Does anyone have a recipe for an original waffle mix? I don't want anything different .. just a plain waffle ... but something you've tried so I know it tastes good! :)

    Okay so I use this recipe when I make waffles. If you don't have buttermilk add 1 TBSP. Vinegar to milk or cream and let sit for 15 minutes then mix well and that's buttermilk. GOOD LUCK. Simple and Delicious!!!!

    Beat egg whites until stiff. Set aside. Stir dry ingredients together. Mix milk and egg yolks. Put into dry ingredients. Mix. Beat in shortening. Fold in egg whites.
    How about a yeast waffle batter? Make it tonight and let it ferment. The flavor is sweet and nutty - yummy.





    RAISED WAFFLES





    FOR THE SPONGE:


    1/2 cup warm water


    1 package active dry yeast


    2 cups milk, warmed


    8 tablespoons (1 stick) butter, melted


    1 teaspoon salt


    1 teaspoon sugar


    2 cups flour





    FOR THE BATTER:


    2 eggs


    1/4 teaspoon baking soda





    TO PREPARE THE SPONGE:


    Select large mixing bowl. (Note: Batter will rise to double its original volume.) Add water to bowl. Sprinkle in yeast. Let stand for 5 minutes to dissolve. Add milk, melted butter, salt, sugar and flour. Beat until smooth and well blended. Cover bowl with plastic wrap. Let stand overnight at room temperature.





    TO FINISH THE BATTER:


    Just before cooking waffles, beat in eggs. Add baking soda. Stir until well mixed. (Note: batter will be very thin.)





    TO BAKE THE WAFFLES:


    Pour 1/2 to 3/4 cup of batter into very hot waffle iron. Bake until golden and crisp.





    Leftover batter will keep well several days in refrigerator.





    Makes 8 waffles
