Any good recipes for Waffle Batter please.?

BUTTERMILK WAFFLES





1 1/4 cups of sifted cake flour or 1 2/3 cups unbleached flour


1 1/2 tsp baking powder


1/2 tsp baking soda


1/2 teaspoon salt


6 fluid oz eggs or 4 large eggs


2 cups buttermilk


16 tbsp. or 2 sticks of butter





Sift together flour, baking powder, and salt. Beat eggs and buttermilk until well mixed. Add to flour mixture and beat lightly with a fork until flour is moistened. Stir in the butter. The batter should be lumpy. Over mixing will produce tough waffles.

Super light waffles - whip up the batter the night before


1 pkg. active dry yeast


5 c. all-purpose white flour


1/2 c. sugar


1 tsp. salt


2 tsp. baking soda


1 qt. buttermilk


3/4 c. butter, melted


4 eggs





In a large bowl, combine yeast, flour, sugar, salt and baking soda. Stir in buttermilk and butter. Add eggs, one at a time, mixing well so that batter is well blended. Cover with plastic wrap and store in refrigerator overnight.


When ready to make, bake waffles in waffle iron according to manufacturer's instructions. Place baked waffles in a single layer directly on oven racks in a 300 degree oven for at least 5 minutes or until ready to serve.





To store, cool waffles completely on wire racks, wrap and freeze for up to one month. Reheat waffles in toaster without thawing.

Prepare pr preheat the waffle irons or waffle machine as directed in the instructions.





Combine the flour with the baking soda, salt, and sugar, if using, in a bowl and make a well in the center. Add the egg yolk and milk, and gradually, work into the flour using a whisk. Beat gently until smooth. Carefully stir in the melted butter.





In a grease-free bowl, whisk the egg white until stiff and carefully fold into the batter using a large metal spoon.





Pour enough batter to ensure that the molded surface of the lower plates are covered sufficiently (for an electric plate, you will need about 3 tablespoons for each plate). Close the irons or lid and cook until the waffles are just brown on the outside, about 3 minutes. When the waffles are ready, remove them with a two pronged fork or or a wooden skewer, taking care not to scratch the nonstick coating. Place on a wire rack lined with a clean tea towel and baking parchment. Fold the paper and towel over the waffle to keep it moist. Continue to make waffles, about 12 in total, stacking the cooked waffles between sheets of parchment, until ready to serve.

Preheat the waffle iron according to the manufacturer's instructions. In 1 medium bowl sift together flour, baking powder, and salt. Set aside. In a second bowl use the wooden spoon to beat together the egg yolks and sugar until sugar is completely dissolved and eggs have turned a pale yellow. Add the vanilla extract, melted butter, and milk to the eggs and whisk to combine. Combine the egg-milk mixture with the flour mixture and whisk just until blended. Do not over mix. In third bowl, beat the egg whites with an electric mixer until soft peaks form, about 1 minute. Using the rubber spatula, gently fold the egg whites into the waffle batter. Do not overmix! Coat the waffle iron with non-stick cooking spray and pour enough batter in iron to just cover waffle grid. Close and cook as per manufacturer's instructions until golden brown, about 2 to 3 minutes. Serve immediately.

WAFFLES








8 oz. SR Flour


2 teaspoons Baking Powder


陆 teaspoon Salt


1 tablespoon Sugar


2 Egg Yolks


3 Egg Whites, lightly beaten


1 陆 cups Milk








1. Make a well in the centre of the sifted dry ingredients.


2. Pour in the egg yolks and the milk.


3. Combine them with a few swift strokes and beat until stiff but not dry.


4. Fold the egg whites into the batter until they are barely blended.


5. Heat the Waffle Iron.


6. Add a little Oil.


7. Pour some batter onto the surface, close the lid, and wait for about 4 minutes. (When the waffle is ready, all steam will have stopped emerging from the crack of the iron).


8. Serve with Maple Syrup, Butter and Cream.
Yeast Waffles





This is a traditional waffle recipe. It makes tasty, crunchy waffles. They are very good with syrup, or my personal favorite is waffles topped with whipped cream and fresh strawberries





INGREDIENTS


2 cups milk


1 (.25 ounce) package active dry yeast


1/2 cup warm water (110 degrees F/45 degrees C)


1/2 cup butter, melted


1 teaspoon salt


1 teaspoon white sugar


3 cups sifted unbleached all-purpose flour


2 eggs, slightly beaten


1/2 teaspoon baking soda


DIRECTIONS


Warm the milk in a small saucepan until it bubbles, then remove from heat. In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.


In a large bowl, combine milk, yeast mixture, butter, salt, sugar and flour. Mix thoroughly with rotary or electric mixer until batter is smooth. Cover and let stand at room temperature overnight.


The next morning, stir beaten eggs and baking soda into the batter; beat well.


Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown.
