What's your favorite pancake, crepe or waffle recipe?

Or if you would give me some good sites that would also be helpful. What's your favorite pancake, crepe or waffle recipe?
This is what we use. Yummy.

We also do a stacked %26amp; stuffed version with these. Buy a carton of ready to eat cheesecake filling %26amp; your favorite pie filling in a can. Put down 1 pancake %26amp; spread with cheesecake filling, top with another pancake. Top that with the pie filling %26amp; whipped cream. Kind of like Bob Evans does.

';A yummy breakfast treat, and very easy to make!! Serve with bacon or sausage, and some fried eggs, wonderful!!! Batter will keep in fridge for a couple of days if you can't make all at once, or you can freeze and make at a later date.';

INGREDIENTS:

5 eggs

1 1/2 cups milk

6 tablespoons butter, melted

5 cups buttermilk

5 cups all-purpose flour

5 teaspoons baking powder

5 teaspoons baking soda

1 pinch salt (optional)

5 tablespoons sugar

DIRECTIONS:

1. In a large bowl, whisk together the eggs, milk, butter and buttermilk. Combine the flour, baking powder, baking soda and sugar; stir into the wet ingredients just until blended. Adjust the thickness of the batter to your liking by adding more flour or buttermilk if necessary.

2. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side. Continue with remaining batter. What's your favorite pancake, crepe or waffle recipe?
This recipe is one of my all time favorites:

Baked Apple-Pecan Maple Pancakes

Ingredients:

1 cup pancake/waffle mix

1/2 cup milk

1 egg

2 tablespoons butter, melted

1 cup apple - peeled, cored and sliced

1/2 teaspoon ground cinnamon

1/3 cup pecans, chopped

3 tablespoons maple syrup

Directions:

Preheat oven to 350 degrees F (175 degrees C). Mix together pancake mix, milk and egg until blended. Set aside.

Pour melted butter in 9-inch pie plate. Place apple slices in bottom of pie plate. Sprinkle cinnamon and pecans over apples and drizzle syrup over top. Pour batter over apples.

Bake at 350 degrees F (175 degrees C) for 30 minutes or until top springs back when touched. Loosen edges and invert onto serving platter. Cut into wedges before serving.

For a different twist on the pancake, these are also yummy!

Louisiana Sweet Potato Pancakes

Ingredients:

3/4 pound sweet potatoes

3 1/2 teaspoons baking powder

1 teaspoon salt

1/2 teaspoon ground nutmeg

2 eggs, beaten

1 1/2 cups milk

1/4 cup butter, melted

Directions:

Place sweet potatoes in a medium saucepan of boiling water, and cook until tender but firm, about 15 minutes. Drain, and immediately immerse in cold water to loosen skins. Drain, remove skins, chop, and mash.

In a medium bowl, sift together flour, baking powder, salt, and nutmeg. Mix mashed sweet potatoes, eggs, milk and butter in a separate medium bowl. Blend sweet potato mixture into the flour mixture to form a batter.

Preheat a lightly greased griddle over medium-high heat. Drop batter mixture onto the prepared griddle by heaping tablespoonfuls, and cook until golden brown, turning once with a spatula when the surface begins to bubble.

Check out allrecipes.com The best pancakes (banana walnut) and waffles I've ever made came from that site. The site has reader reviews and ratings, so it's hard to pick a bad recipe. Also, the site allows you to scale a recipe up or down depending on your needs. It's awesome for my hubby and me.
