=]Any good waffle recipes?
I dont use any pancake mix for waffles and neither should any one else. pancake and waffle mixes are 2 completely different mixes. i make my waffles all from scratch and they all are super tasty. here's my recipes for you to try out. including waffle brownies! Good Luck!

Light Crisp Waffles

';Fine Cooking Magazine';

A required rest in the oven not only adds to the crispiness of the waffles but, allows you to make a big batch so everyone can eat at once.

3 1/2 oz. (3/4 c.) AP flour

1 oz. (1/4 c.) cornstarch

1/2 tsp. table salt

1/2 tsp. baking powder

1/4 tsp. baking soda

3/4 c. buttermilk

1/4 c. milk

6 Tbs. vegetable oil

1 large egg separated

1Tbs. granulated sugar

1/2 tsp. vanilla extract

Heat oven to 200 degrees F. and heat the waffle iron. Mix the flour cornstarch, salt, baking powder and soda in a medium bowl. Measure the buttermilk, milk, and oil in a Pyrex measuring cup; mix in the egg yolk and set aside.

In another bowl, beat the egg white almost to soft peaks. Sprinkle in the sugar and continue to beat until the peaks are firm and glossy. Beat in vanilla.

Pour the buttermilk mixture into the dry ingredients and whisk until just mixed. Drop the egg white onto the batter in dollops and fold in with a rubber spatula until just incorporated.

Pour the batter onto the hot waffle iron (1/2 to 2/3 cup depending on your waffle iron) and cook until the waffle is crisp and brown. (Follow your manufacturers directions for timing then adjust to your liking). Set the waffle directly on the oven rack to keep it warm and crisp. Repeat with remaining batter, holding the waffles in the oven (don't stack them). When all the waffles are cooked, serve immediately.

Serves 5, 8 inch waffles.

Light and Crispy Belgian Waffles

Makes 8 (7-inch) round waffles

Replacing the butter with vegetable oil reduced the moisture in the batter and swapping some of the flour for cornstarch made for crisper waffles, but it was the surprising addition of Rice Krispies to the batter that delivered an extra-crisp and light texture. The cereal imparted a malty, slightly sweeter flavor, and each puffed grain of rice produced a tiny pocket of air in the waffles. For single waffle makers, use 2/3 cup batter per waffle. For double waffle makers, use 1 1/3 cups batter in total. If you don't use enough batter, the Rice Krispies can scorch. Serve with syrup.

鈥?1 1/4 cups all-purpose flour

鈥?1 cup Rice Krispies

鈥?3/4 cup cornstarch

鈥?1/4 cup sugar

鈥?1 teaspoon baking powder

鈥?1/2 teaspoon baking soda

鈥?3/4 teaspoon table salt

鈥?2 large eggs, separated

鈥?1 1/2 cups milk

鈥?1 teaspoon vanilla extract

鈥?1/2 cup vegetable oil

1. Preheat traditional waffle iron to medium. Meanwhile, stir flour, Rice Krispies, cornstarch, sugar, baking powder, baking soda, and salt together in large bowl. Whisk egg yolks, milk, vanilla, and oil together in medium bowl.

2. With electric mixer or balloon whisk, beat egg whites in bowl to soft peaks. Pour milk mixture over dry ingredients and whisk until combined. Whisk in beaten whites until just combined. Do not overmix; a few streaks of whites should be visible.

3. Pour 2/3 cup batter (see note above) into center of preheated waffle iron and use back of dinner spoon to spread batter toward outer edges (batter should reach about 1/2 inch from edges of iron before closing lid). Close lid and cook until deep golden brown, 3 to 4 minutes. Serve immediately.

In all honesty, this is the best one I've ever had. Get a box of Jiffy cornbread mix. It has the instructions for cornbread waffles on the box. I was wary since I'm not a huge fan of waffles or cornbread, but these rocked! Especially with Bing cherry jam and boysenberry syrup. Don't forget the whipped cream and berries!
What ever you do ...DON';T USE BISQUICK!!! Get ';KRUSTEAZ'; brand...follow the directions for the amount of people you have to serve... right before you put them on the waffle iron...add some diced up granny smith apples...or fresh strawberries...or blue berries...butter and syrup...YUMMMM!!!!
