happie cookingg :D:D

i love waffles i named my dig waffles..hehehehhahaha

edit: i also thought u would like this blueberry syrup recipe as the topping for those waffles.

1-1/2 pounds blueberries, lightly rinsed

2 cups sugar

1 vanilla bean, split lengthwise( vanilla essence also can be used 2 teaspoons)

3/4 cup water

1 Tablespoon fresh lemon juice

Combine the blueberries and sugar in a large heavy saucepan. Toss gently with a rubber spatula to mix, then stick the vanilla bean into the center or mix in the vanilla essence.

Add the water and lemon juice to the blueberry mixture and bring to a boil over high heat, stirring occasionally. Reduce the heat slightly and simmer, skimming off any foam that rises to the surface, until the mixture starts to thicken, about 15 minutes.

Remove from the heat and strain through a fine sieve. Cool to room temperature and refrigerate, tightly covered, until ready to use.

Because the amount of sugar added to the blueberries acts as a natural preservative, the syrup will keep, covered and refrigerated, for up to 2 months. It makes a super-special topping for waffles, pancakes, and French toast, as well as for ice cream sundaes.
Grandma's Fluffy Pancakes/Waffles (Passed to me from my dad's mom)

Mix: 2 cups allpurpose flour

4 tsp baking powder

2 tsp salt

Add: 2 cups cold milk (2% or whole is best)

2 egg yolks

set this aside.

In a bowl beat the 2 egg whites until fluffy (stiff peaks)

fold them gentle into batter.

Lightly grease pan or spray and cook either as pancakes or as waffles. (Spray pan between each batch.)

Makes 17-20 pancakes (I forget how many waffles, depends on the waffle iron you use.)
