What are some good blueberry waffle recipes?

2 eggs, separated


1 1/2 cups milk


1/2 cup melted butter


2 cups sifted all-purpose flour


2 teaspoons baking powder


1/2 teaspoon salt


1 tablespoon sugar


1 cup fresh or frozen blueberries, rinsed


PREPARATION:


In a small mixing bowl, beat egg whites until stiff; set aside. Beat egg yolks; add milk and melted butter. Sift dry ingredients together; add egg yolk mixture and mix until smooth and fold in blueberries.





Gently fold in beaten egg whites. Bake in a hot waffle iron.


Makes about 6 blueberry waffles.

2 blueberry waffles (frozen)


2 tsp. ';I Can't Believe It's Not Butter';


3 tbsp. talking Mrs. Butterworth's maple syrup


1 (8 oz.) glass cold milk





Carefully cut waffles in half. Insert into the toaster, set on medium darkness. When waffle pops up, lightly butter. Cut into desirable squares. Generously pour on syrup.

APPLESAUCE DESSERT WAFFLES





4 apple-cinnamon, blueberry, or plain frozen waffles


3/4 c. Mott's chunky applesauce


3 tbsp. maple syrup or maple flavored syrup


1/2 tsp. ground cinnamon


Frozen vanilla yogurt





In a toaster, toast waffles according to package directions.


Meanwhile, in a small saucepan, stir together applesauce, maple syrup and cinnamon. Cook and stir over medium heat about 3 minutes or until heated through.

Blueberry Oat Waffles





INGREDIENTS


2 cups buttermilk pancake mix


1/2 cup quick-cooking oats


3 tablespoons sugar


1 1/2 cups milk


1 egg


1 tablespoon vegetable oil


1 cup fresh or frozen blueberries











DIRECTIONS


In a bowl, combine the pancake mix, oats and sugar. Whisk the milk, egg and oil; stir into dry ingredients just until combined. Fold in berries. Bake in a preheated waffle iron according to manufacturer's direction.











Blueberry Waffles with Fast Blueberry Sauce





INGREDIENTS


3 egg yolks, beaten


1 2/3 cups milk


2 cups all-purpose flour


2 1/4 teaspoons baking powder


1/2 teaspoon salt


1/4 cup melted butter


3 egg whites, stiffly beaten


2/3 cup blueberries





1 1/2 cups blueberries


3 tablespoons honey


1/2 cup orange juice


1 tablespoon cornstarch











DIRECTIONS


In a medium bowl, whisk together egg yolks and milk. Stir in flour, baking powder and salt. Stir in butter, and set mixture aside for about 30 minutes.


Preheat a lightly greased waffle iron.


Fold egg whites and 2/3 cup blueberries into the mixture. Scoop portions of the mixture into the prepared waffle iron, and cook until golden brown.


To prepare the sauce, in a medium saucepan over medium heat, mix 1 1/2 cups blueberries, honey and 1/4 cup orange juice. Bring to a boil. Mix remaining orange juice and cornstarch in a small bowl, and stir into the blueberry mixture. Stir constantly until thickened. Serve warm over waffles.
This is the blueberry waffle recipe - I also added some others for variations:





1 c wheat flour


1 t Baking powder


1/4 t Salt


1/4 t Baking soda


1 T Sugar


1/2 c milk


1/2 c fresh, frozen or canned blueberries w/juice





Mix the dry ingredients togther; then mix in the milk and the blueberries. If the batter is too thick, mix in more blueberry juice until it is the right consistency. Cook in a nonstick pan until they look edible. They will be very blue

BLUEBERRY PANCAKES





4 eggs


3 1/2 c. milk


4 c. pancake mix


1 c. blueberries





Break eggs into mixer bowl. Beat eggs on medium speed. Add milk. Beat on low. Add pancake mix slowly. Beat until smooth. Mixture should flow from spoon. Slowly add milk or pancake mix as necessary to achieve same. (Necessary to hold blueberries in pancake while cooking.) Fold in blueberries with spoon. Cook on griddle at 350 degrees until bubbles stop on one side, then flip over.

Ingredients:


1-2/3 cups all-purpose flour


4 teaspoons baking powder


1/2 teaspoon salt


2 eggs, separated


3-2/3 cups milk, divided


6 tablespoons vegetable oil

1 teaspoon vanilla extract


Fresh strawberries


Directions:


In a bowl, combine flour, baking powder and salt. In another bowl, beat egg yolks lightly. Add 1-2/3 cups milk and oil; stir into dry ingredients just until moistened. Set aside 1/4 cup batter in a small bowl. Beat egg whites until stiff peaks form; fold into remaining batter. Bake in a preheated waffle iron according to manufacturer's directions until golden brown. In a saucepan, heat sugar and remaining milk until scalded. Stir a small amount into reserved batter; return all to pan. Bring to a boil; boil for 5-7 minutes or until thickened. Remove from the heat; add vanilla and mix well (sauce will thicken upon standing). Serve over waffles. Top with berries
