Does anyone have a good recipe for savoury waffle batter?

We've tried a few in our waffle maker (including one with creme fraiche in it) - but not really happy with any so far!Does anyone have a good recipe for savoury waffle batter?
Normally, I like sweet waffles, but I ran across this recipe for savory waffles, tried it and really liked it!





Cheesy bacon waffles:


1 egg


1 cup milk


8 ounces sour cream


1 tablespoon butter, melted


2 cups baking mix* (see note)


8 strips bacon, cooked and crumbled


1 cup shredded Cheddar cheese





Combine egg, milk, sour cream and butter; mix until well blended. Fold in bacon and cheese. Bake in preheated waffle iron according to manufacturer's directions until golden brown.





*Note: I make my own baking mix like this:


8 cups all-purpose flour


1 1/4 cups nonfat dry milk powder


1/4 cup baking powder


1 tablespoon salt


2 cups shortening





Combine flour, milk, baking powder, and salt in a very large bowl. Cut in shortening until it resembles coarse cornmeal. Store in tightly closed covered container in a cool place.Does anyone have a good recipe for savoury waffle batter?
Savoury Waffles with Pumpkin %26amp; Pancetta





Ingredients


Makes 8 waffles





180g plain flour


120g fine cornmeal


2 teaspoons baking powder


1 teaspoon Marmite


2 eggs, separated


225ml milk


200ml yogurt


2 tablespoons snipped fresh chives





200g diced pumpkin flesh


freshly ground pepper


olive oil


100g cubed Pancetta


Maple syrup





Recipe


Mix together the pumpkin and Pancetta, drizzle with a little olive oil and roast in a medium hot oven for 20 minutes.


To make the waffles, sift the flour, cornmeal and baking powder into a large bowl. Put the egg yolks into another bowl, add the milk, yogurt, Marmite and 2 tablespoons of olive oil and whisk well. Next add the flour mixture and beat well. Put the egg whites into a clean bowl and whisk until you have stiff peaks then using a large metal spoon gently fold the egg whites and chives into the waffle batter.


Depending on the size of your waffle iron spoon about 125ml of the batter into the pre-heated and lightly oiled waffle iron. Cook until crisp ? about 4-5 minutes, keep warm and repeat until all the batter is used.


Place a waffle on each plate and using a slotted spoon pile the roasted pumpkin and Pancetta on top drizzled with lashings of maple syrup. Serve immediately.
1 3/4 cup flour


2 teaspoons baking powder


1/2 teaspoon salt


1 tablespoon sugar


3 eggs


7 tablespoons vegetable oil


1 1/2 cups milk


Preheat the waffle iron. Sift the dry indredients into a medium sized bowl. Separate the eggs, putting the egg whites in smaller bowl. Beat the egg whites until they are stiff. (If you are using an electric mixer, you can beat the egg whites first, then beat the batter without having to wash the beaters. The reverse is not true. If you beat the batter first and you have to wash the beaters before beating the egg whites.) Add the egg yolks, oil and milk all at one time to the dry indredients. Beat until there are no lumps in the batter. Fold the egg whites into the other batter using a spatula or other flat utinsel. Put a full 1/2 cup of batter in your waffle iron to make a 9-inch round waffle. This recipe makes about eight 9 inch waffles.

CHOCOLATE WAFFLE TURTLE COOKIES





2 oz. semisweet chocolate


1/3 c. butter


1 c. flour


1/2 c. sugar


1/4 c. milk


1 tsp. vanilla


1 egg





Heat waffle iron to low. Heat chocolate and butter in 1 1/2 quart saucepan until melted. Stir in remaining ingredients except Chocolate Glaze.


Drop 1 tablespoon batter onto each of the 4 sections of ungreased waffle iron. Batter will not spread. Bake 3 minutes, cool. Drizzle with Chocolate Glaze. Sprinkle with chopped nuts, if desired. About 2 dozen cookies.








CHOCOLATE GLAZE:





Heat 3 oz. semi sweet chocolate and 1 teaspoon shortening until melted.
Ever try Belgian waffles?





2 pkg. dry yeast


2 c. warm milk


4 eggs separated


1 tsp. vanilla


2 1/2 c. sifted flour


1/2 tsp. salt


1 tbsp. sugar


1/2 c. melted butter





Sprinkle yeast over warm milk, stir to dissolve. Beat egg yolks. and add to yeast mixture with vanilla. Sift together flour, salt and sugar, add to liquid ingredients. Stir in melted butter and combine thoroughly. Beat the egg whites until stiff, carefully fold into batter. Let mixture stand in a warm place about 45 minutes or until it doubles in bulk. Use 1/2 cup mix per waffle. Makes 8 to 9 waffles.
